Sottoriva's
Athena is a heavy duty, high output
divider rounder with 5 or 6 rows. The
Athena is perfect for working with soft
or semi-hard dough to produce round
bread without further processing, stamped
bread, hamburger buns, finger rolls,
pita and pizza. Thanks to the Athena's
star dosing system and adjustable portioning
pressure, your product is handled gently,
avoiding the stress applied by some
other machines. In
addition, the Athena is unique to the
market in that a special 4 pocket configuration
can produce up to 8 half ounce pieces
at up to 8000 pieces per hour. |

Pocket Roll Divider Rounder |
|

The
LYRA pocket roll divider rounder
is capable of producing up to 4000 pieces
per hour between 1 and 5 ½ ounces.
The machine is equipped with a hopper
to hold approximately 40 lbs of dough.
The dough is gently fed to the adjustable
dividing chambers by a star wheel dosing
system. When adjusted it gives the required
weight with minimal punishment for artisan
quality products.

volumetric divider utilizes no mechanical
compression of the dough. This means that
it may give you the benefits of automation
without unnecessary dough punishment.
It divides up to 1800 pieces per hour,
from 3oz to 57oz. It's also available
with electronic controls that will stop
the machine when it reaches your pre-selected
piece count. For stiff dough's or fermented
dough an optional pressurized hopper
is available. It uses gentle air pressure
to push the dough into the dividing chamber. |

This machine is perfect for the production
of long-loaves from 3.5 to 53 ounces with
the ability to mould to a maximum length
of 24 inches. Because its rollers are
produced with a non-stick plastic material,
it's suitable for all types of dough,
especially those with medium and high
percentages of water. The large diameter
rollers and the flanging of the first
set, permits the machine to roll the loaves
with high precision, obtaining a perfect
long-loaf. The 20-inch sheeting rollers
can be fully adjusted for different thickness,
applying less stress to the dough. In
addition, the calibrated mechanism of
the moulding table allows for fine adjustment
and an independent variable height of
the front and rear of the moulding plate.
The machine is equipped with moulding
side guides to finish the dough ends and
guarantee uniformity of each loaf. |
